Ingredients
500g Philadelphia cream cheese
200g crème fraîche
½ cup lemon juice
1 heaped teaspoon Spice Fetish Bush Lemon
1 small red onion, finely chopped
300g roasted Atlantic salmon, roughly chopped
Fresh chives, finely chopped, to garnish
Method
Remove the cream cheese from the refrigerator several hours before preparing the dip, allowing it to soften.
Place the softened cream cheese and lemon juice into a food processor. Pulse until smooth.
Add the crème fraîche and most of the Bush Lemon, reserving a little for garnishing. Pulse lightly until combined.
Place the roasted salmon and finely chopped red onion into a deep mixing bowl.
Gently stir through the cream cheese mixture until everything is combined.
Spoon onto a serving dish and finish with the reserved Bush Lemon and finely chopped chives.
Glen's Tip: For a delicious variation, substitute crayfish for the roasted Atlantic salmon.
