Rich and aromatic, Spice Fetish Aussie Bush Curry brings distinctive bush flavours to hearty, slow-cooked dishes. Perfect for creating warming beef and lamb curries packed with flavour.

Slow Cooked Beef Curry
1 kilo of blade steak or gravy beef, trimmed of fat and cut into cubes
1 large onion, finely chopped
4 cloves garlic, finely chopped
1 heaped dessertspoon of freshly grated, then finely chopped, ginger
45g Aussie Bush Curry
1 can whole Italian tomatoes
Small half cup water
2 tablespoons olive oil
Juice of half lemon
1 teaspoon sugar
2 teaspoons salt
Heat a large heavy based saucepan over medium heat. Add the oil and gently fry the onion until soft, around five minutes. Add the garlic and ginger and cook for a further few minutes. Now add the meat a handful at a time while sprinkling over the Aussie Bush Curry. Cook for 8 to 10 minutes, constantly stirring until the meat is well coated with the curry powder.
Add the tomatoes, sugar and water, roughly breaking up the tomatoes with a wooden spoon while stirring. Season with salt and slowly bring to boiling point. Turn the heat very low and gently simmer for 1 ½ to two hours until the meat is tender. Add the lemon juice and more salt if required.
Aromatic Lamb Curry
Shoulder of lamb – approx 1kg, cut into cubes
1 large onion, finely chopped
4 cloves garlic
1 heaped dessertspoon freshly grated, then finely chopped ginger
45g Aussie Bush Curry
1 large aubergine (approx. 700g), cut into thick slices then diced
1 can whole Italian tomatoes
¾ cup of stock or water
2 tablespoons olive oil
Juice of half lemon
1 teaspoon sugar
2 teaspoons salt
200g natural yogurt
Make as above before adding the eggplant with the tin tomatoes. Taste and season if necessary. Lastly, ripple through the yogurt and drizzle over ½ tablespoon olive oil before serving.
